Shauna James Ahern sent me a copy of Gluten-Free Girl and the Chef (a love story) in anticipation of Thanksgiving (a very glutenous, gluttonous holiday if ever there was one). She hopes to spread the word that gluten-free baking is tasty and fun to share with those that we love. Check and check.
Last week, we celebrated Veteran’s Day with two days off from school and an excellent (gluten-free!) baking project: chocolate peanut butter brownies.
Holden told me, “Mommy, I like being your big grocery store helper; I wish I could be 146,000 feet tall so I’d be the biggest helper there is!”
Sweet, right? Of course, as a giant, he couldn’t fit in the store, but his heart is in the right place.
After our scavenger-hunt-like search for Xantham gum ($13, ouch) and our argument over whether unsweetened chocolate could be delicious if enough sugar was added to the recipe, Holden and I enjoyed our baking adventure: we got to use fun gadgets that I didn’t remember I owned such as the food scale and the double boiler; Holden was very responsible for dumping, mixing, and swirling; together, we whisked and licked beaters.
The result? Super tasty but a little less pretty than Shauna’s own picture. Is it okay to blame my five-year-old peanut butter swirler that we didn’t achieve the picture perfect image below? Sorry, kid. I love you anyway.

Well, you definitely win for the cutest post of this GF baking challenge. That photo of the beater-licking, grocery store helper definitely brought a nostalgic smile to my face! My boys are all grown up and no longer “helping” me in the kitchen.
Yes, xanthan gum is over-the-top expensive, especially considering what it’s made from. =)

I was quite embarrassed that I didn’t remember it was a baking thing, but now looking at your complete listing, I see others made recipes that didn’t require baking either. Shewww, I’m not feeling quite as badly now. LOL BTW, I try to make as many recipes as I can without xanthan gum because I’m not crazy about the ingredients or the cost, and most importantly so many folks can’t tolerate gums. Anyway, great job, and nice to meet you!

okay, that picture of your son licking the whisk is ADORABLE! I love it!
And those peanut butter brownies sound great. As for the xanthan gum, keep in mind that it’s $13 for that bag, but that bag will last you pretty much FOREVER. You rarely use more than a teaspoon or two at at time. I’m lucky that I can find it in bulk though, so I just buy a little at a time…

Just an FYI–I bought 2 pounds of xanthan gum from e-bay for $9, with free shipping. I make a loaf of gf bread every week, so I’ll use it fairly quickly.
