I've made these with almost every method and every cooking temperature possible but this is the lowest temp I've tried and is by FAR my favorite way. It's a lot harder to burn them and they cook much more evenly than at higher temps. It takes a little longer but it's well worth the wait. It's also the first time I've cooked them in such large pieces and they are so much prettier than when they're all cut up!!!

@Gudrun, I think that you can crank up the temperature and reduce the baking time but Auntie Karen disagrees. I'll be curious what you think about your own kale chips. I just bought some more kale today...

@Kristal, I'll have to try the leomon. I've also done it with a little apple cider vinegar for some tang.

@ladykay, sorry to hear it. My youngest son likes to crumble them into tiny bits of dust rather than eat them. Do you think he absorbs any of the nutrients that way?

How fortuitous! I was just thinking about making Kale Chips today, as a friend was raving about them on her FB page. And we have kale coming in our weekly veggie box on Friday. So timely!

I made kale chips for the first time just a few days ago. Unfortunately the entire family was unanimous in their review. It is official, we don't like kale. Oh well.

My daughter LOVES kale chips! I found my recipe in Parents magazine a few months ago and it included a little lemon juice with the olive oil. Gives the chips a nice tang:). Ellie would eat a whole batch I think if I didn't make her share! Thankfully she only has to share with me; her dad won't try them:(
