		<description><![CDATA[We eat a lot of eggs too.  With three kids, we go through 4-5 dozen a week.  When you hard boil or poach, the cooking temp is low enough that the lecithin in the yolk isn&#039;t damaged- even if the yolk is cooked.  You can also fry if the yolk is left runny.  Lecithin is a fat emulsifier- breaks down fat- and is naturally present in eggs.  There is a full range of fats in eggs, including omega-3&#039;s.  Not to mention the most easily absorbed protein of any food. They got a bad rap for too long.]]></description>
