Batch cooking has revolutionized my life! It makes cooking so much easier. Two of my recent favorites come from Aimee of Simple Bites and Under the High Chair.

The first, is a Taco Bake, which is incredibly yummy and both my husband and daughter love. http://www.simplebites.net/how-to-sneak-veggies-into-meals/

The second is a Chicken Pot Pie with Leek and Lemon. Now, you had me at pot pie, but this is incredibly good. http://www.underthehighchair.com/2010/01/chicken-pot-pies-with-leek-lemon.html

get a whole loaf of bread, vanilla, and a dozen eggs. make an entire loaf's worth of french toast. then wait for it all to cool a bit and freeze it. then, when you and your hungry muchkin want some french toast for breakfast or a snack, just pop a couple slices into the toaster. it's so yummy and super easy!
